I have one word. WOW! Once I started reading I could not put it down. You completed a tremendous amount of research. Even with the extensive amount of research that you put in I love how you have also personalized your journey and decisions through personal and family experiences. For example, the chapter on the products and where to find them in the store. That is very helpful. I can easily carry it and refer to the pages. I also found the pictures you present on your website and in the book of the various foods to be very helpful. What I like is that you not only say in words but you also give a picture. From an educational stand point you accommodate different learning styles.

I have already tried the Aztec recipe with the black beans and "chicken" and the barbecued chic-ketts. It is sooooooooo good! Oh.....another thing.....I really like when you make suggestions at the end or your recipes of what would be good to go with that particular meal. Samuel (my son) loved the Aztec recipe and the Barbecued Fried Chic-ketts also. I made the sweet potato fries too. He always wants to know exactly what he is eating and I told him it was something new that I was experimenting with and to have an open mind. He said he would try it and ended up loving the food. He said, "Mama, this is heaven!" Needless to say I was excited.
