Gardein Chik'n Salad            (click here to go back to recipes)


8 pcs Gardein Chik'n "breasts"  (available at  health food stores and grocery stores in the refrigerated section)
2 stalks celery, chopped
¼  large onion, chopped
1 teaspoon Spike®
4 Tablespoons sweet relish
4 tablespoons Vegenaise
1 squirt of yellow mustard (optional)

Cut the Gardein into bite-sized pieces, and place into a bowl. Add the celery, onion, Spike, relish and Vegenaise. Mix together until all ingredients are well combined.

Serve on a bed of fresh greens, on a tortilla, or on a sandwich. For variety, try adding walnuts, raisins, apple pieces or even curry powder!

Keeps fresh in the refrigerator for days.
