INGREDIENTS
2 ready made pizza dough crusts - your choice of flavor (I like garlic herb or whole wheat from Trader Joe's)
32 oz pizza or pasta sauce
4 cups vegan cheese * (I like Daiya Italian Blend - available at Whole Foods and other markets, or visit www.daiyafoods.com)
½ cup chopped sweet onions
2 cups sliced mushrooms (I like crimini and portobello)
6 Tofurky® Italian Sausages - sliced
2 - 4 TBSP Italian Seasoning
2 cups chopped broccoli
1 cup chopped fresh pineapple (optional)
Oil for sautéing (I use grapeseed or canola)
* You can use mozarella cheese instead of the vegan cheese if you prefer a dairy option.
DIRECTIONS
Preheat oven to 450 degrees (or follow the directions on your pizza dough).
Remove the crusts from thier wrapper and gently stretch the dough covering the bottom of a non-stick cookie sheet. Make sure that the dough is spread evenly so that there are no thin spots in the crust. Cover the crusts with a generous layer of pizza sauce (depending upon your preference, you may use less than the 32 ozs.) Cover the sauce with about half of the cheese, sprinkled evenly. Set aside.
In a large skillet, add a little oil (about 2 TBSP) and sauté the onions, mushrooms and Tofurky sausages for about a 1 - 2 minutes. Do not overcook. Add the Italian Seasoning (to taste) and the broccoli and sauté another minute or two. Do not overcook. You just want the sausages to be soft and juicy, and the broccoli lightly steamed.
When the vegetables are done, spoon them out on top of the pizza, ensuring even distribution. Add the pineapples if applicable. Cover with remaining cheese.
Place the pizza in the preheated oven for about 14 minutes, or according to the instructions on your pizza dough. NOTE: Each oven is slightly different - check on the pizza periodically to ensure that the cheese is not burning.
Remove the pizza and enjoy!
