1 package thinly sliced Tofurky® deli slices, Hickory Smoked flavor
1 large submarine or French roll
Eggless mayonnaise (I like Follow Your Heart Grapeseed Mayo)
Mustard (optional)
½ cup fresh spinach or spring lettuce mix
1 TBSP. Chopped, pickled Fire Roasted Yellow & Red Peppers (I use Trader Joe’s)
1 TBSP. Mixed Grilled Vegetable Bruschetta (I use Trader Joe’s or Whole Foods)
½ small tomato, sliced
½ avocado, sliced (optional)
Miso Mayo, Spicy Red Pepper Flavor (Whole Foods or other natural food stores carries this)
Oil for sautéing
Directions:
Sauté the Tofurky slices in oil for about a minute. Do not overcook. You just want them to become soft and juicy.
Cut the submarine (or french) roll in half, lengthwise. Spread the eggless mayonnaise and mustard inside (top and bottom half)
Line the bottom half with the Tofurky slices. Top with the remaining vegetables and then finally, add a thick squirt of the Miso Mayo.
